Mexican - Entree

Traditional mexican dish consisting of tortillas simmered with salsa. Add your favorite toppings for a personal twist.

In a small pot bring about 2-3 cups of water to a boil. Add tomato, 1/4 onion (amount varies by size) and garlic. Remove veins, seeds and stalks from peppers, add to pot. Cook mixture over low-med heat for about 8-10 minutes.

In a large skillet, heat oil over medium heat. Slice remaining onion into slices. Add to skillet, saute onion until it starts to become translucent.

Cut tortillas into small triangles, albeit a pizza slice. Add to skillet.

Strain tomato mixture into a blender, add a dash of clean water. Blend mixture and season as desired. Can add chicken bouillon for added flavor. Add sour cream to blender and continue to blend. The sour cream will help dilute the mixture and lower the heat.

Continue to cook tortillas. They will become slightly crunchy, this is up to personal preference.

Add sauce to skillet and continue to cook over low heat for 2-5 minutes. Add salt if needed.

7.

Remove from heat and serve. Garnish with cheese and additional sour cream if desired.
